Ingredients

  • olive oil – 2 tablespoons
  • scallions (finely sliced) – 2 cups / 200 g
  • garlic (minced) – 2 cloves
  • potatoes (peeled and diced) – 2 medium / 400 g
  • vegetable broth – 4 cups / 960 ml
  • salt – 1 teaspoon
  • black pepper – 1/2 teaspoon
  • heavy cream – 1/2 cup / 120 ml

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sliced scallions and garlic, and sauté until softened and fragrant, about 5 minutes.
  2. Add diced potatoes to the pot, stirring well to coat them with the oil and scallion mixture.
  3. Pour in the vegetable broth, increase the heat to high, and bring to a boil.
  4. Reduce the heat to low, cover, and let simmer until the potatoes are tender, approximately 20 minutes.
  5. Using an immersion blender, purée the soup until smooth. Alternatively, transfer the soup to a blender in batches and purée until smooth.
  6. Stir in the heavy cream, season with salt and black pepper to taste, and simmer gently for an additional 5 minutes before serving.
