Ingredients
- Ripe avocado – 2 large / approx. 400 g
- Chicken broth – 4 cups / 960 ml
- Fresh lime juice – 2 tbsp / 30 ml
- Cilantro leaves – 1/4 cup / 10 g, chopped
- Serrano pepper – 1 small, seeded and minced
- Salt – 1 tsp / 5 g
- Black pepper – 1/2 tsp / 2.5 g
- Olive oil – 1 tbsp / 15 ml
- White onion – 1/2 medium / 75 g, chopped
- Garlic cloves – 2, minced
Instructions
- Heat olive oil in a pot over medium heat. Add the onion and garlic, sauté until the onion becomes translucent.
- Add the chicken broth, bring it to a boil, then reduce heat and simmer for 10 minutes.
- In a blender, combine avocados, lime juice, cilantro, serrano pepper, and the simmered broth. Blend until smooth.
- Season with salt and black pepper to taste.
- Reheat gently before serving, if desired. Garnish with additional cilantro and a lime wedge.
