- Pickles, sliced – 1 cup / 120 g
- Capers – 2 tablespoons
- Olives, pitted and halved – 1/2 cup / 75 g
- Beef broth – 1.5 liters / 6 cups
- Bay leaf – 2 leaves
- Lemon, sliced – 1 whole
- Salt and black pepper – to taste
- Fresh dill, chopped – 1/4 cup / 15 g
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until translucent.
- Mix in the tomato paste and cook for 2 minutes to caramelize slightly.
- Add the assorted meats and cook until browned.
- Stir in pickles, capers, and olives, and cook for an additional 3 minutes.
- Pour in the beef broth, add bay leaves, and bring to a boil.
- Reduce heat to low, cover, and simmer for 45 minutes.
- Season with salt and pepper to taste. Just before serving, add lemon slices for a burst of freshness.
- Garnish with fresh dill before serving hot.
