Ingredients

- Spanish whisky – 100 ml / 3.4 oz
- chicken broth – 200 ml / 6.8 oz
- lemon juice – 2 tbsp / 30 ml
- salt – to taste
- freshly ground black pepper – to taste
- parsley, chopped – 2 tbsp / 8 g
Instructions
- Slice the pork tenderloin into medallions about 1-inch thick.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the sliced garlic cloves and sauté until golden brown, then remove them from the pan and set aside.
- Season the pork medallions with salt and pepper, then add to the skillet.
- Cook the pork on each side for about 2-3 minutes until golden brown, then remove them from the skillet.
- Deglaze the skillet by adding the whisky, allowing it to reduce slightly.
- Pour in the chicken broth, and lemon juice. Stir until mixed.
- Return the pork medallions and garlic to the skillet and simmer for another 10 minutes, allowing the pork to absorb the sauce.
- Garnish with chopped parsley before serving.
