Ingredients
- Lamb shoulder, cubed – 1 kg / 2.2 lbs
- Olive oil – 4 tbsp / 60 ml
- Yellow onion, sliced – 1 large
- Garlic cloves, minced – 4 cloves
- Red wine – 1 cup / 240 ml
- Tomato paste – 2 tbsp / 30 g
- Carrots, chopped – 2 medium
- Potatoes, cubed – 2 large
- Eggplant, cubed – 1 medium
- Zucchini, sliced – 1 large
- Bay leaves – 2 leaves
- Fresh thyme – 1 tbsp / 3 g
- Salt and pepper – to taste
- Water – 1 cup / 240 ml
Instructions
- In a large pot, heat olive oil over medium-high heat and brown the lamb cubes until golden. Remove and set aside.
- In the same pot, lower the heat to medium and sauté the onion and garlic until soft and translucent.
- Pour in the red wine, letting it simmer for about 5 minutes to reduce slightly, scraping up any browned bits from the bottom.
- Stir in tomato paste, returning the lamb to the pot, and mix to coat the meat.
- Add carrots, potatoes, eggplant, zucchini, bay leaves, and thyme. Season with salt and pepper.
- Add water, bring to a gentle simmer, then cover and lower the heat. Let it cook slowly for about 1.5 to 2 hours, stirring occasionally, until the meat is tender and the flavors meld beautifully.
