Sobrebarriga Sudada is a flavorful traditional Colombian stew featuring ‘sobrebarriga’ (flank steak), a beloved cut known for its rich, beefy texture. Ingredients
- flank steak (sobrebarriga) – 2 lbs / 900 g
- yellow onion, chopped – 1 large / 200 g
- tomatoes, chopped – 4 medium / 300 g
- red bell pepper, sliced – 1 large / 150 g
- potatoes, peeled and quartered – 4 medium / 600 g
- garlic cloves, minced – 3 cloves
- ground cumin – 1 tsp
- beef broth – 2 cups / 480 ml
- vegetable oil – 2 tbsp
- fresh cilantro, chopped – 1/2 cup / 25 g
- salt – to taste
- black pepper – to taste
Instructions
- Heat oil in a large pot over medium heat. Add the flank steak and sear on both sides until browned.
- Remove the steak and set aside. In the same pot, add onion, garlic, and red bell pepper. Sauté until the onion is translucent.
- Stir in the chopped tomatoes and cook until they break down, about 5 minutes.
- Return the steak to the pot and sprinkle with cumin, salt, and black pepper. Add the beef broth and bring to a simmer.
- Cover the pot and reduce heat to low. Simmer for 1.5 to 2 hours, until the steak is tender.
- Add the quartered potatoes and cook for another 30 minutes, or until the potatoes are tender.
- Stir in the chopped cilantro and adjust seasoning if necessary. Serve hot.
