Sobrebarriga Sudada is a flavorful traditional Colombian stew featuring ‘sobrebarriga’ (flank steak), a beloved cut known for its rich, beefy texture. Ingredients

  • flank steak (sobrebarriga) – 2 lbs / 900 g
  • yellow onion, chopped – 1 large / 200 g
  • tomatoes, chopped – 4 medium / 300 g
  • red bell pepper, sliced – 1 large / 150 g
  • potatoes, peeled and quartered – 4 medium / 600 g
  • garlic cloves, minced – 3 cloves
  • ground cumin – 1 tsp
  • beef broth – 2 cups / 480 ml
  • vegetable oil – 2 tbsp
  • fresh cilantro, chopped – 1/2 cup / 25 g
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat oil in a large pot over medium heat. Add the flank steak and sear on both sides until browned.
  2. Remove the steak and set aside. In the same pot, add onion, garlic, and red bell pepper. Sauté until the onion is translucent.
  3. Stir in the chopped tomatoes and cook until they break down, about 5 minutes.
  4. Return the steak to the pot and sprinkle with cumin, salt, and black pepper. Add the beef broth and bring to a simmer.
  5. Cover the pot and reduce heat to low. Simmer for 1.5 to 2 hours, until the steak is tender.
  6. Add the quartered potatoes and cook for another 30 minutes, or until the potatoes are tender.
  7. Stir in the chopped cilantro and adjust seasoning if necessary. Serve hot.
