Ingredients
- buckwheat soba noodles – 8 oz / 225 g
- nori sheets – 4 full-size sheets
- cucumber – 1, julienned
- carrot – 1, julienned
- avocado – 1, sliced
- rice vinegar – 2 tbsp / 30 ml
- soy sauce – 2 tbsp / 30 ml
- wasabi paste – as needed
- pickled ginger – for serving
Instructions
- Cook the soba noodles according to the package instructions. Once cooked, drain and rinse them under cold water to stop the cooking process.
- Gently toss the noodles with rice vinegar and soy sauce in a large bowl.
- Place a nori sheet on a bamboo sushi mat, shiny side down.
- Arrange a layer of seasoned soba noodles evenly over the nori, leaving about 1 inch (2.5 cm) at the top free.
- Lay the cucumber, carrot, and avocado neatly across the center of the soba layer.
- Using the bamboo mat, carefully roll the nori over the fillings, pressing gently but firmly to seal the roll.
- Slice the roll into bite-sized pieces with a sharp knife.
- Serve the soba maki with a side of wasabi paste, soy sauce, and pickled ginger.
