Snail noodle soup (bún ốc) – Classic

Bún ốc, a traditional Vietnamese street food, originates from Hanoi, where the vendors’ stalls lined the vibrant streets, offering bowls of warm, aromatic snail noodle soup. The dish is celebrated for its harmonious melding of rich flavors – tangy, umami, and a hint of herbaceous freshness. Typically, it features chewy rice noodles and tender snails served in a flavorful broth that’s eagerly slurped up by locals and visitors alike.

Ingredients

  • fresh snails – 500 g
  • rice noodles – 400 g
  • pork bones – 1 kg
  • tomatoes – 3, chopped
  • tamarind paste – 3 tbsp
  • fermented shrimp paste – 1 tbsp
  • fish sauce – 3 tbsp
  • ginger – 1 piece (3 cm), sliced
  • garlic – 4 cloves, minced
  • red chili – 1, sliced
  • annatto seeds – 2 tbsp
  • vegetable oil – 3 tbsp
  • spring onions – 2, chopped
  • perilla leaves – 1 bunch, chopped
  • lime wedges – for serving
  • salt – to taste
  • water – 2 liters

Instructions

  1. Thoroughly wash the snails in clean water with a pinch of salt. Rinse and repeat twice, then drain.
  2. Boil the pork bones in 2 liters of water for 1 hour to make a light broth, skimming off any foam.
  3. In another pot, heat the vegetable oil. Add the annatto seeds until the oil turns red. Discard the seeds.
  4. Fry the garlic and ginger in the annatto oil until fragrant. Add tomatoes and tamarind paste, stir for about 5 minutes.
  5. Add in the fermented shrimp paste and fish sauce. Stir for another 3 minutes.
  6. Pour the pork bone broth into the tomato mixture and simmer for 20 minutes to allow flavors to blend.
  7. Meanwhile, prepare the rice noodles according to the package instructions. Drain and set aside.
  8. Add the snails to the broth. Cook over medium heat for 5-10 minutes.
  9. Divide the rice noodles among serving bowls. Ladle the snail broth over the noodles.
  10. Top with sliced spring onions and perilla leaves. Serve with lime wedges and sliced red chili.
