- Onion powder – 1 tsp
- Cayenne pepper – 1/2 tsp
- Brown sugar – 2 tbsp
- Sausage casings – As needed
- Ice water – 1/2 cup / 120 ml
Instructions
- Grind the pork shoulder and beef brisket using a medium-coarse grinder plate.
- In a large bowl, combine the ground meats with salt, black pepper, smoked paprika, garlic powder, onion powder, cayenne pepper, and brown sugar.
- Add the ice water gradually, mixing until the ingredients are well incorporated and the mixture is sticky.
- Soak sausage casings in warm water and rinse them thoroughly.
- Stuff the sausage mixture into the casings using a sausage stuffer, taking care not to overfill.
- Preheat your smoker to 225°F (110°C).
- Smoke the sausages for 1.5 to 2 hours or until they reach an internal temperature of 160°F (71°C).
- Allow the sausages to rest for a few minutes before serving.
