Slippery Dumplings is an exceptional Southern U.S. comfort food, a dish with roots planted firmly in the time-honored tradition of indulging guests and family members alike. Originating in the rural American South, these dumplings are renowned for their pleasingly soft and tender texture, which gracefully glides down the palate. Typically cooked with rich broth and tender meat, Slippery Dumplings serve as a fulfilling reminder of warmth and love passed from one generation to the next.

Ingredients

  • chicken breasts – 2 pieces / 500 g
  • chicken broth – 6 cups / 1440 ml
  • all-purpose flour – 2 cups / 240 g
  • vegetable oil – 2 tbsp / 30 ml
  • salt – 1 tsp / 5 g
  • baking soda – 1/2 tsp / 2.5 g
  • cold water – 1/2 cup / 120 ml
  • pepper – 1/2 tsp / 2 g

Instructions

  1. In a large pot, place chicken breasts and cover with chicken broth. Bring to a boil, then reduce heat and simmer until cooked through, about 20 minutes.
  2. Remove chicken, shred it, and set aside. Retain the broth.
  3. In a large bowl, mix flour, salt, and baking soda. Add oil and cold water, stirring until dough forms.
  4. Roll out the dough on a floured surface to a 1/4-inch thickness. Cut into strips approximately 1×3 inches.
  5. Bring the broth back to a gentle simmer. Drop the dough strips into the broth.
  6. Cook for 15 minutes or until the dumplings are soft. Add shredded chicken back to the pot. Season with pepper.
  7. Serve hot, garnished with freshly chopped parsley if desired.
