Ingredients

  • Sauerkraut – 500 g / 17.6 oz
  • Pork ribs – 500 g / 17.6 oz
  • Potatoes – 4 medium, diced
  • Carrots – 2 large, sliced
  • Onion – 1 large, chopped
  • Bay leaves – 2
  • Black peppercorns – 1 teaspoon
  • Fresh dill – 2 tablespoons, chopped
  • Salt – to taste
  • Water – 2 liters / 8 cups

Instructions

  1. In a large pot, place pork ribs and cover with water. Bring to a boil, then reduce heat and simmer for 30 minutes, skimming off any foam.
  2. Add sauerkraut, bay leaves, and black peppercorns to the pot. Simmer for another 40 minutes.
  3. Add diced potatoes, sliced carrots, and chopped onion. Continue to simmer for 20-25 minutes until the vegetables are tender.
  4. Remove the pork ribs, cut the meat from the bones, and return meat to the soup.
  5. Season with salt to taste and sprinkle chopped fresh dill before serving.
