Simit, often referred to as the ‘Turkish bagel,’ is a cherished staple in Turkey, with a heritage that’s deeply ingrained in the cultural fabric of the nation. Originating from the Ottoman era, simit is known for its iconic crust, golden sesame seeds, and soft, airy interior. This bread is traditionally enjoyed as a quick breakfast or snack, often paired with tea, cheese, and fresh vegetables. Its texture and flavor make it a beloved street food, bringing a sense of nostalgia to those who savor it.
Ingredients
- all-purpose flour – 4 cups / 480 g
- water – 1 1/2 cups / 360 ml, lukewarm
- active dry yeast – 2 1/4 tsp / 7 g
- sugar – 2 tbsp / 25 g
- salt – 1 tsp / 6 g
- vegetable oil – 1/4 cup / 60 ml
- molasses – 1/2 cup / 120 ml
- water – 1/2 cup / 120 ml
- sesame seeds – 1 cup / 140 g
Instructions
- In a small bowl, dissolve yeast and sugar in lukewarm water. Let it stand for about 10 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Add the yeast mixture, followed by the vegetable oil. Mix until a dough begins to form.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Cover and let it rest in a warm place for about 1 hour or until doubled in size.
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Divide the dough into 8 equal pieces. Roll each piece into a long rope, about 24 inches (60 cm) in length, and form a circle connecting the ends.
- In a shallow dish, mix molasses with water. Dip each dough circle into the molasses mixture, then coat with sesame seeds.
- Place the simit rings on the prepared baking sheet. Let them rest for another 20 minutes.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.
- Allow to cool slightly before serving, and enjoy your simit with tea and optional accompaniments like cheese and olives.
