Ingredients
- beef shank – 1 kg / 2.2 lbs
- water – 10 cups / 2.4 liters
- onions, chopped – 2 medium / 300 g
- carrots, sliced – 3 large / 250 g
- potatoes, cubed – 2 large / 300 g
- tomatoes, chopped – 3 medium / 300 g
- salt – 2 tsp / 10 g
- ground black pepper – 1 tsp / 5 g
- turmeric – 1 tsp / 5 g
- coriander seeds – 1 tsp / 5 g
- cumin seeds – 1 tsp / 5 g
- bay leaves – 2 leaves
Instructions
- In a large pot, add the beef shank and water. Bring to a boil and then reduce to a simmer.
- Skim off any foam that forms on the surface.
- Add the chopped onions, carrots, and cubed potatoes to the pot. Stir to combine.
- Incorporate chopped tomatoes, salt, black pepper, turmeric, coriander seeds, cumin seeds, and bay leaves.
- Cover and let simmer for 2-3 hours, or until the meat is tender and the vegetables are cooked.
- Remove the bay leaves and adjust seasoning if required.
- Serve hot with Afghan bread or naan.
