It’s a staple during the colder months in Syria, offering a rich and hearty meal that’s both nutritious and satisfying. The soup is traditionally made with red lentils, aromatic spices, and a hint of lemon to bring balance to its rich flavors. Ingredients
- red lentils – 1 cup / 200 g
- olive oil – 2 tbsp / 30 ml
- onion, chopped – 1 large / 150 g
- garlic, minced – 3 cloves
- cumin powder – 1 tsp / 2 g
- coriander powder – 1 tsp / 2 g
- turmeric powder – 1/2 tsp / 1 g
- vegetable broth – 6 cups / 1.5 liters
- lemon juice – 2 tbsp / 30 ml
- salt – to taste
- black pepper – to taste
- fresh cilantro, chopped – for garnish
Instructions
- Rinse the red lentils under cold water until the water runs clear.
- In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
- Stir in minced garlic, cumin, coriander, and turmeric. Cook for another 2 minutes until fragrant.
- Add the rinsed lentils to the pot and stir to coat with the spiced mixture.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and let simmer for 25-30 minutes until the lentils are soft.
- Use an immersion blender to puree the soup until smooth. Adjust consistency with additional water if needed.
- Stir in fresh lemon juice, salt, and pepper to taste.
- Serve hot, garnished with fresh cilantro.
