Ingredients
- canned chickpeas – 2 cans / 800 g
- onion – 1 medium, finely chopped
- garlic cloves – 3, minced
- vegetable oil – 2 tablespoons
- ground cumin – 1 teaspoon
- ground coriander – 1 teaspoon
- turmeric – 1/2 teaspoon
- tomato paste – 2 tablespoons
- vegetable broth – 2 cups / 480 ml
- lemon juice – 2 tablespoons
- salt – to taste
- black pepper – to taste
- fresh cilantro – 1/2 cup, chopped
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, ground cumin, ground coriander, and turmeric. Cook for an additional 2 minutes until fragrant.
- Mix in the tomato paste and cook for another 2 minutes.
- Add the canned chickpeas and vegetable broth to the pot. Bring the mixture to a boil, reduce the heat, and let it simmer for 20 minutes.
- Stir in the lemon juice and season with salt and black pepper to taste.
- Garnish with chopped fresh cilantro before serving.
