Ingredients
- Flour – 3 cups / 375 g
- Dill – 1 bunch
- Eggs – 2 large
- Water – 1/2 cup / 120 ml
- Salt – 1 tsp
- Ground beef or lamb – 1 lb / 450 g
- Onion, finely chopped – 1 large
- Tomato paste – 2 tbsp
- Cumin – 1 tsp
- Paprika – 1 tsp
- Black pepper – 1/2 tsp
- Oil – 2 tbsp
Instructions
- Blend the dill with water until smooth, and strain to obtain dill juice.
- Mix flour, dill juice, eggs, and salt to form a dough. Knead until smooth and elastic. Let it rest for 30 minutes.
- Roll out the dough thinly on a floured surface, then cut into strips to form noodles.
- Boil the noodles in salted water for 3-4 minutes until tender, then drain and set aside.
- In a pan, heat oil and sauté onions until translucent. Add the ground meat and cook until browned.
- Stir in tomato paste, cumin, paprika, salt, and pepper, and let simmer for 10 minutes.
- Serve the noodles topped with the meat sauce.
