Shito Sauce is a fiery and flavorful condiment originating from Ghana. Traditionally made by the Ga people, this sauce combines an intricate blend of spices and seafood, delivering a deeply umami-rich and spicy experience. Typically served with rice, grilled fish, or chicken, it brings a burst of exotic taste to everyday meals.

Ingredients

  • dried shrimp powder – 1/2 cup / 60 g
  • dried smoked fish powder – 1/2 cup / 60 g
  • vegetable oil – 1 cup / 240 ml
  • onions, finely chopped – 2 large / 400 g
  • ginger, minced – 1 tablespoon / 15 g
  • garlic, minced – 1 tablespoon / 15 g
  • dried chili powder – 1/2 cup / 60 g
  • tomato paste – 1/2 cup / 120 g
  • bouillon cubes – 2 cubes
  • salt – 1 teaspoon / 5 g

Instructions

  1. Heat the vegetable oil in a large saucepan over medium heat.
  2. Add the finely chopped onions and sauté until golden brown.
  3. Stir in the minced ginger and garlic, cooking until fragrant.
  4. Mix in the tomato paste and cook for 5 minutes, stirring constantly.
  5. Add the shrimp powder, fish powder, and chili powder, stirring well to combine.
  6. Crumble in the bouillon cubes and season with salt.
  7. Continue to cook, stirring frequently, for 20-30 minutes until the oil separates and rises to the top, with a thick and rich texture.
  8. Allow the sauce to cool slightly before transferring to clean jars.

  • dried smoked fish powder -> ground smoked mackerel
  • bouillon cubes -> 1 tablespoon soy sauce
