Sheftalia is a beloved Cypriot meat dish, which originated in the sunny Mediterranean island of Cyprus. This dish exemplifies the cultural fusion that Cyprus cuisine embodies—marrying flavors from Greece, Turkey, and the Middle East. Traditionally, sheftalia is made with a mix of ground pork and lamb wrapped in caul fat, a method that keeps the meat juicy and flavorful as it grills over an open flame. These flavorful bundles are typically served in a pita with fresh vegetables and creamy sauces.

Ingredients

  • ground pork – 350 g / 12 oz
  • ground lamb – 350 g / 12 oz
  • onion, finely chopped – 1 medium / 150 g
  • parsley, finely chopped – 1/2 cup / 30 g
  • salt – 1 tsp / 5 g
  • black pepper – 1/2 tsp / 2 g
  • ground cinnamon – 1/2 tsp / 1 g
  • caul fat – sufficient for wrapping
  • lemon wedges – for serving
  • pita breads – 4

Instructions

  1. In a large bowl, combine ground pork and lamb, chopped onion, parsley, salt, pepper, and cinnamon. Mix well to ensure the spices are evenly distributed.
  2. Soak the caul fat in warm water for 10 minutes to soften it, making it easier to work with.
  3. Cut the caul fat into pieces roughly 10 x 10 cm / 4 x 4 inches.
  4. Take a tablespoon of the meat mixture and shape it into a sausage form about 8 cm / 3 inches long.
  5. Wrap each meat piece with caul fat, ensuring it is well enclosed.
  6. Preheat a grill to medium-high heat.
  7. Grill the sheftalia for about 15 minutes, turning occasionally, until the meat is cooked through and the caul fat is crisp and lightly charred.
  8. Serve the sheftalia hot inside pita breads with lemon wedges on the side.
