Ingredients

  • lamb, bone-in cubes – 1 kg / 2.2 lbs
  • plain yogurt – 1 kg / 4 cups
  • water – 500 ml / 2 cups
  • onion, chopped – 1 large / 150 g
  • salt – 2 tsp
  • cornstarch – 2 tbsp / 16 g
  • garlic cloves, minced – 4 cloves
  • butter – 2 tbsp / 28 g
  • ground cinnamon – 1/2 tsp
  • black pepper – 1 tsp
  • pine nuts, toasted (optional) – 1/4 cup / 35 g

Instructions

  1. In a large pot, melt butter over medium heat and sauté onions until translucent.
  2. Add the lamb pieces, salt, black pepper, and cinnamon, and brown the meat on all sides.
  3. Pour 500 ml (2 cups) water over the lamb, bring to a boil, then simmer for 45 minutes or until tender.
  4. In a separate bowl, whisk yogurt with cornstarch to prevent curdling.
  5. Gradually incorporate yogurt mixture into the pot, stirring constantly, and cook over low heat until it thickens, approximately 15 minutes.
  6. Stir in minced garlic and cook for an additional 5 minutes.
  7. Garnish with toasted pine nuts and serve hot over a bed of rice.
