Ingredients

  • all-purpose flour – 3 cups / 360 g
  • unsalted butter – 1/2 cup / 115 g, melted
  • sugar – 1/2 cup / 100 g
  • salt – 1/2 tsp
  • water – 1/2 cup / 120 ml
  • ricotta cheese – 1 1/2 cups / 375 g
  • vanilla extract – 1 tsp
  • lemon zest – 1 tbsp
  • candied orange peel – 1/4 cup / 40 g, chopped
  • egg – 1, beaten
  • powdered sugar – for dusting

Instructions

  1. Combine the flour, salt, and sugar in a bowl. Gradually add water while kneading until a smooth dough forms. Wrap in plastic and let rest for 30 minutes.
  2. Roll out the dough very thin, about 1/8 inch. Brush melted butter over the surface.
  3. Starting at one end, roll the dough into a log, trimming any excess. Wrap it tightly in plastic wrap and chill for at least 2 hours.
  4. Preheat the oven to 375°F (190°C).
  5. In a bowl, mix ricotta, sugar, vanilla, lemon zest, and candied orange peel until well combined.
  6. Slice the chilled dough log into 1-inch pieces. Gently press the center of each piece and stretch into a cone shape.
  7. Fill the center with ricotta mixture and pinch the edges to seal.
  8. Place pastries on a baking sheet and brush with beaten egg.
  9. Bake for 20-25 minutes or until golden brown. Allow to cool slightly.
  10. Dust with powdered sugar before serving.
