Sfințișori, or ‘Little Saints’, is a traditional Moldovan pastry typically prepared to commemorate the religious holiday of Mucenici. This pastry is deeply embedded in the cultural and spiritual fabric of Moldova, often made on March 9th. The dish features a unique combination of soft, fluffy dough with a fragrant blend of honey, walnuts, and citrus zest, resulting in a delightful and aromatic treat.

Ingredients

  • all-purpose flour – 4 cups / 500 g
  • milk – 1 1/4 cups / 300 ml
  • sugar – 1/3 cup / 70 g
  • unsalted butter – 1/3 cup / 75 g, melted
  • egg – 2 large
  • yeast – 2 1/4 tsp / 7 g, instant
  • salt – 1 tsp
  • honey – 1/2 cup / 120 ml
  • walnuts – 1 cup / 100 g, finely chopped
  • lemon zest – 1 tbsp
  • orange zest – 1 tbsp

Instructions

  1. In a large mixing bowl, combine warm milk and sugar; stir until dissolved. Sprinkle yeast over milk mixture, let it sit for 5 minutes until foamy.
  2. Add melted butter, eggs, and salt to the yeast mixture; mix well.
  3. Gradually add flour and mix until a soft, slightly sticky dough forms. Knead for 10 minutes until smooth.
  4. Place dough in a greased bowl, cover, and let it rise for 1-2 hours or until doubled in size.
  5. Preheat oven to 350°F (175°C).
  6. Divide dough into 16 equal pieces. Roll each piece into a thin rope and shape into an ‘8’. Arrange on a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes or until golden brown.
  8. While baking, mix honey, lemon zest, and orange zest. Brush hot Sfințișori with honey mixture and sprinkle with chopped walnuts.
