Serre la sus is a comforting Belizean soup that’s steeped in tradition and rich history. Ingredients
- chicken thighs – 4 pieces / 600 g
- coconut milk – 1 can / 400 ml
- sweet potatoes – 2 large / 400 g
- cassava – 200 g / about 1 cup peeled and cubed
- carrots – 2 medium / 150 g
- onion – 1 large / 150 g
- garlic – 4 cloves
- fresh thyme – 1 tbsp
- allspice berries – 5
- salt – to taste
- pepper – to taste
- vegetable oil – 2 tbsp
Instructions
- Season chicken thighs with salt, pepper, and a few allspice berries.
- Heat vegetable oil in a large pot over medium heat. Add chicken, browning on all sides, then remove and set aside.
- In the same pot, sauté onions and garlic until fragrant and translucent.
- Add sweet potatoes, cassava, and carrots, cooking for about 5 minutes.
- Pour in coconut milk and about 2 cups / 480 ml of water. Bring to a simmer.
- Return chicken to the pot, add thyme and the rest of the allspice berries. Cover and cook for 25-30 minutes.
- Taste and adjust seasoning with additional salt and pepper as desired.
