Seolleongtang – Classic

Seolleongtang is a rich, milky-white soup crafted with love and patience, revered in South Korea for its comforting warmth and nourishing properties. This traditional Korean dish is celebrated for its deep umami flavor, which results from simmering ox bones over long hours. Believed to have originated during the Joseon Dynasty, it was said to be created by a king who wanted to provide hearty meals to the people during festive banquets. Today, it is cherished for its simplicity and soul-soothing appeal.

Ingredients

  • ox leg bones – 2 lbs / 900 g
  • brisket – 1 lb / 450 g
  • water – 15 cups / 3.5 liters
  • garlic – 8 cloves
  • green onions – 4 stalks
  • salt – to taste
  • black pepper – to taste
  • cooked white rice – 4 cups / 800 g
  • kimchi – to serve

Instructions

  1. Thoroughly rinse ox bones in cold water to remove blood. Repeat until water runs clear.
  2. In a large pot, add ox bones and brisket, cover with water, and bring to a vigorous boil for 10 minutes.
  3. Drain, discard water, and rinse bones and brisket under cold water.
  4. Rinse the pot, return bones, brisket, garlic, and 15 cups of water. Bring to a simmer over medium heat.
  5. Continue to simmer for 6 hours, occasionally skimming fat and impurities. Refill water as necessary to keep bones fully submerged.
  6. After 6 hours, remove brisket, let it cool, and slice thinly.
  7. Strain the broth, discarding bones and garlic. Return strained broth to pot.
  8. Season with salt and pepper to taste.
  9. Divide rice into bowls, top with sliced brisket, pour hot broth over, and garnish with chopped green onions.
  10. Serve with kimchi.
