Sekuwa is a traditional Nepali meat dish that embodies the flavors of the Himalayas. This grilled meat delicacy is traditionally made using chicken, lamb, or pork that’s been marinated with a harmonious blend of Nepali spices including cumin, coriander, and timur (Sichuan pepper). Originating from the Terai region, Sekuwa is deeply rooted in the cultural festivals and celebrations of Nepal, offering a smoky, rich taste that brings people together over barbecues and open fires in both rural and urban settings.
Ingredients
- Chicken thighs – 2 lbs / 900 g
- Yogurt – 1/2 cup / 120 g
- Mustard oil – 2 tbsp
- Garlic paste – 1 tbsp
- Ginger paste – 1 tbsp
- Cumin powder – 2 tsp
- Coriander powder – 2 tsp
- Turmeric powder – 1 tsp
- Chili powder – 1/2 tsp
- Timur (Sichuan pepper) – 1/2 tsp
- Salt – to taste
- Lemon juice – 2 tbsp
Instructions
- Cut the chicken thighs into bite-sized pieces.
- In a large bowl, combine yogurt, mustard oil, garlic paste, ginger paste, cumin, coriander, turmeric, chili powder, timur, salt, and lemon juice.
- Add the chicken pieces to the marinade, ensuring every piece is well coated. Allow to marinate for at least 1 hour in the refrigerator.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto skewers.
- Grill the chicken skewers for about 10-15 minutes, turning occasionally, until fully cooked and slightly charred.
- Serve hot with fresh coriander and a wedge of lemon.
