The Seafood Bird’s Nest, known as Hai Xian Qiao Chao in Chinese, is an exquisite dish originating from the coastal regions of China. Ingredients
- shrimp – 12 pieces, peeled and deveined
- scallops – 200 g / 7 oz
- calamari – 100 g / 3.5 oz, sliced
- carrot – 1, julienned
- baby corn – 100 g / 3.5 oz, sliced
- snow peas – 150 g / 5.3 oz
- mushrooms – 150 g / 5.3 oz, sliced
- crispy noodles – 200 g / 7 oz
- ginger – 1 inch piece, minced
- garlic – 2 cloves, minced
- soy sauce – 2 tbsp
- oyster sauce – 2 tbsp
- chicken stock – 1 cup / 240 ml
- cornstarch – 2 tbsp dissolved in 2 tbsp water
- vegetable oil – for frying
- sesame oil – 1 tsp
Instructions
- Heat vegetable oil in a deep pan. Fry the crispy noodles until golden and crispy, then drain on paper towels.
- In a wok, heat 2 tablespoons of oil over medium heat. Add ginger and garlic, sauté until fragrant.
- Add shrimp, scallops, and calamari, and stir-fry until just cooked, about 2-3 minutes.
- Throw in the carrot, baby corn, snow peas, and mushrooms, and stir-fry for another 2 minutes.
- Stir in soy sauce, oyster sauce, and chicken stock. Bring to a simmer.
- Add the cornstarch slurry and stir until the sauce thickens.
- Drizzle with sesame oil before serving.
- To serve, place the crispy noodles on a plate, spoon the seafood and vegetable mixture into the ‘nest.’
