Ingredients
- New potatoes – 500 g / 1 lb
- Carrots – 200 g / 7 oz
- Green beans – 150 g / 5 oz
- Peas – 150 g / 5 oz
- Leek – 1 large, sliced
- Vegetable broth – 750 ml / 3 cups
- Cream – 200 ml / 3/4 cup
- Butter – 30 g / 2 tbsp
- Fresh parsley – 2 tbsp, chopped
- Salt and black pepper – to taste
Instructions
- Peel and dice the potatoes and carrots into bite-sized pieces.
- Trim and slice the green beans into 2 cm pieces.
- In a large pot, melt the butter over medium heat and add the sliced leeks. Sauté until softened.
- Add potatoes, carrots, green beans, and peas to the pot.
- Pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes, until vegetables are tender.
- Stir in the cream and adjust the taste with salt and black pepper.
- Sprinkle with fresh parsley before serving.
