Sayadieh is a traditional Lebanese rice dish, deeply rooted in Lebanon’s coastal regions where fishing is a way of life. Its name translates to ‘fisherman’s dish’, reflecting its origins as a humble, nourishing meal crafted by those who lived by the sea. It combines fragrant rice, caramelized onions, and perfectly seasoned fish, resulting in a comforting, aromatic dish that has traveled from modest kitchens to elegant dining tables.

Ingredients

  • basmati rice – 2 cups / 400 g
  • white fish fillets (e.g., cod) – 500 g
  • large onions – 2, thinly sliced
  • olive oil – 3 tablespoons
  • pine nuts – 1/4 cup / 35 g
  • ground cumin – 1 teaspoon
  • turmeric – 1 teaspoon
  • cinnamon stick – 1
  • lemon juice – 3 tablespoons
  • salt – to taste
  • black pepper – to taste
  • water – 4 cups / 1 liter
  • fresh parsley – for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak in cold water for 20 minutes.
  2. In a large pan, heat olive oil over medium heat. Add the onions and sauté until deeply caramelized, about 20-25 minutes.
  3. Remove half of the onions and set them aside for garnishing.
  4. To the remaining onions in the pan, add the turmeric, cumin, cinnamon, and salt. Stir to combine.
  5. Add the fish fillets, cooking on each side for 3-4 minutes until just cooked through. Remove fish and set aside.
  6. Drain the rice and add it to the onion-spice mixture in the pan. Stir to coat the rice in the spices.
  7. Add water, bring to a boil, and then reduce the heat to low. Cover and simmer for 15-20 minutes until the rice is tender.
  8. Meanwhile, toast pine nuts in a dry pan until golden brown. Set aside.
  9. Once the rice is cooked, flake the fish and gently fold it into the rice.
  10. Add lemon juice and adjust seasoning with salt and pepper.
  11. Garnish with reserved caramelized onions, toasted pine nuts, and fresh parsley.
