Sauce Madère, a classic French creation, is a luxurious sauce that historically hails from the culinary grandeur of France. Characterized by its velvety texture and rich flavor profile, this sauce is classically made with Madeira wine, which is sourced from the Portuguese island of Madeira. Notably used to elevate dishes such as roasted meats and steaks, this decadent sauce epitomizes the elegance and complexity of French cuisine while offering a glimpse into the rich tapestry of European culinary history.

Ingredients

  • unsalted butter – 4 tbsp / 56 g
  • shallots, finely chopped – 2 small / 40 g
  • beef stock – 2 cups / 480 ml
  • Madeira wine – 1 cup / 240 ml
  • all-purpose flour – 2 tbsp / 16 g
  • thyme sprigs – 3 sprigs
  • salt – to taste

Instructions

  1. In a saucepan over medium heat, melt 2 tablespoons of butter and add the chopped shallots. Sauté until the shallots are translucent, about 3-4 minutes.
  2. Stir in the flour and cook for another 2 minutes, creating a roux.
  3. Gradually whisk in the beef stock, ensuring there are no lumps.
  4. Add the Madeira wine and thyme sprigs. Bring to a simmer and let it reduce by half, approximately 10 minutes.
  5. Remove the thyme sprigs, then stir in the remaining butter. Season with salt and black pepper to taste.
  6. Strain the sauce through a fine mesh sieve to achieve a smooth texture before serving.
