Ingredients

  • beef tri-tip – 2 lbs / 900 g
  • olive oil – 2 tbsp / 30 ml
  • garlic powder – 2 tsp / 10 g
  • onion powder – 1 tsp / 5 g
  • freshly ground black pepper – 2 tsp / 10 g
  • kosher salt – 1 tsp / 5 g
  • paprika – 1 tsp / 5 g
  • dried oregano – 1 tsp / 5 g

Instructions

  1. Trim excess fat from the tri-tip and pat dry with paper towels.
  2. In a small bowl, mix olive oil, garlic powder, onion powder, black pepper, salt, paprika, and oregano.
  3. Rub the mixture evenly on the tri-tip, covering all sides. Allow to marinate for at least 2 hours, or overnight in the refrigerator for best results.
  4. Prepare your grill using red oak wood for authentic flavor. Preheat it to medium-high heat.
  5. Place the tri-tip on the grill and cook for about 20-25 minutes per side or until the internal temperature reaches 130°F / 54°C for medium-rare.
  6. Let the tri-tip rest for 10 minutes before slicing against the grain into thin slices.
  7. Serve with traditional sides like pinquito beans and a fresh green salad.
