Sansai Soba is a traditional Japanese noodle dish featuring earthy flavors from mountain vegetables. Originating from the rural regions of Japan, this dish is especially popular in the spring when wild mountain vegetables, known as ‘sansai’, are in season. The soba noodles, made from buckwheat, are delicately thin and provide a wholesome, nutty base that complements the fresh, slightly bitter greens to perfection. Served in a light yet flavorful dashi broth, Sansai Soba is a comforting and nutritious meal that captures the essence of Japan’s rich culinary heritage.
