Ingredients
- beef chuck – 2 lbs / 900 g
- chicken thighs – 1 lb / 450 g
- yuca (cassava) – 1 lb / 450 g, peeled and cubed
- green plantains – 2, peeled and sliced
- corn on the cob – 2 ears, cut into chunks
- potatoes – 3 medium, peeled and cubed
- carrots – 2, sliced
- onion – 1 large, chopped
- garlic – 4 cloves, minced
- cilantro – 1/2 cup / 30 g, chopped
- cumin – 1 tsp
- oregano – 1 tsp
- beef broth – 8 cups / 2 liters
- salt – to taste
- pepper – to taste
- olive oil – 2 tbsp
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent, about 5 minutes.
- Add the beef chuck and chicken thighs, browning them on all sides.
- Sprinkle cumin, oregano, salt, and pepper over the meat. Stir for a minute until spices are fragrant.
- Pour in the beef broth and bring to a simmer.
- Add yuca, plantains, corn, potatoes, and carrots to the pot.
- Reduce the heat to low, cover, and simmer for 1.5 hours until the meat is tender and the vegetables are cooked through.
- Stir in cilantro before serving.
