Ingredients

  • chicken thighs – 1 lb / 450 g
  • coconut milk – 2 cups / 480 ml
  • lemongrass stalks – 2, finely chopped
  • kaffir lime leaves – 3, torn
  • red curry paste – 2 tbsp
  • fish sauce – 2 tbsp
  • palm sugar – 1 tbsp
  • potatoes – 2, peeled and cubed
  • carrots – 2, sliced
  • eggplant – 1, diced
  • water – 1 cup / 240 ml
  • cooking oil – 2 tbsp

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the red curry paste and lemongrass, sauté until aromatic.
  3. Add the chicken thighs and brown them slightly.
  4. Pour in the coconut milk and water, bringing to a gentle simmer.
  5. Add the kaffir lime leaves, fish sauce, and palm sugar.
  6. Simmer for 10 minutes, then add the potatoes, carrots, and eggplant.
  7. Continue to cook until the vegetables and chicken are tender.
  8. Adjust seasoning if needed.

Substitutions
