Samaroq is a traditional Afghan stew that combines tender meats with a medley of spices, vegetables, and sometimes legumes, reflecting the rich cultural tapestry of Afghanistan. Ingredients
- boneless lamb shoulder – 2 lb / 900 g
- onions – 2 large, finely chopped
- garlic cloves – 4, minced
- tomatoes – 4 medium, diced
- carrots – 3 medium, sliced
- potatoes – 2 large, cubed
- ground cumin – 2 tsp
- ground coriander – 1 tbsp
- ground turmeric – 1 tsp
- ground cinnamon – 1/2 tsp
- beef stock – 4 cups / 960 ml
- vegetable oil – 3 tbsp
- salt – to taste
- black pepper – 1 tsp
- fresh cilantro – 1/2 cup / 30 g, chopped
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, sauté until the onions are translucent.
- Add the lamb pieces to the pot, browning them on all sides.
- Stir in the tomatoes, cumin, coriander, turmeric, cinnamon, salt, and black pepper. Cook for 5 minutes, allowing the spices to bloom.
- Pour in the beef stock, bring to a boil, and then reduce to a simmer. Cover and cook for 45 minutes.
- Add the carrots and potatoes to the pot, simmer for an additional 30 minutes, or until the vegetables are tender.
- Adjust seasoning if necessary and garnish with fresh cilantro before serving.
