Saleeg is a creamy, comforting rice dish originally from the Hejaz region of Saudi Arabia, celebrated for its simple yet hearty flavors. This dish is akin to an Arabian risotto, traditionally made with a soothing chicken broth, and elegantly infused with fragrant spices like cardamom and cinnamon. Served alongside tender roasted chicken, Saleeg embodies the rich culinary traditions of Saudi cuisine.
Ingredients
- whole chicken – 1 (about 3 lbs / 1.4 kg)
- bay leaves – 2
- cardamom pods – 4
- cinnamon stick – 1
- rice (preferably short grain) – 2 cups / 400 g
- whole milk – 4 cups / 960 ml
- butter – 2 tablespoons / 28 g
- salt – to taste
- black pepper – to taste
- onion – 1, halved
- water – 8 cups / 1.9 liters
Instructions
- Place the chicken in a large pot along with water, bay leaves, cardamom pods, cinnamon stick, and onion. Bring to a boil over medium-high heat.
- Once boiling, reduce heat to medium-low and simmer for about 45 minutes, or until the chicken is cooked through. Skim off any foam.
- Remove chicken from the pot, retaining the broth, and set the chicken aside.
- Rinse the rice under cold water until the water runs clear. Drain thoroughly.
- In a separate pot, bring the reserved chicken broth to a boil.
- Add the rice to the boiling broth and cook until the rice is tender, stirring occasionally.
- Lower the heat and add the milk to the rice. Stir continuously until the mixture thickens and becomes creamy.
- Meanwhile, shred the cooked chicken into bite-sized pieces.
- Stir the butter into the creamy rice mixture. Season with salt and black pepper to taste.
- Serve the Saleeg hot, with shredded chicken arranged on top.

- whole chicken -> boneless chicken breasts or thighs
