Ingredients

  • lemon juice – 2 tbsp / 30 ml
  • white onion – 1 small, finely chopped
  • carbonated mineral water – 3 tbsp / 45 ml
  • salt – to taste
  • white bread – 1 slice, crust removed

Instructions

  1. Soak the slice of white bread in water, then squeeze out the excess moisture.
  2. In a mixing bowl, combine the fish roe with the soaked bread, using a wooden spoon or mixer to blend well.
  3. Gradually add the sunflower oil in a slow stream while continuously mixing until the mixture emulsifies.
  4. Stir in the lemon juice and mineral water to achieve a light and fluffy texture.
  5. Mix in the finely chopped onions and season with salt to taste.
  6. Chill in the refrigerator for at least 1 hour before serving to enhance the flavors.
