Saganlija, a heartwarming stew hailing from sunny Croatia, is a dish that marries simplicity with striking flavors. Ingredients
- chicken thighs – 1 kg / 2.2 lbs
- olive oil – 2 tbsp / 30 ml
- onion, chopped – 1 large / 150 g
- garlic cloves, minced – 3 cloves
- red bell pepper, sliced – 1 large / 150 g
- tomatoes, diced – 400 g / 14 oz can
- tomato paste – 2 tbsp / 30 g
- carrots, sliced – 2 medium / 200 g
- potatoes, cubed – 3 medium / 300 g
- paprika – 1 tbsp / 15 g
- bay leaves – 2 leaves
- chicken broth – 500 ml / 17 fl oz
- fresh parsley, chopped – 2 tbsp / 8 g
- salt and pepper – to taste
Instructions
- Heat olive oil in a large pot over medium-high heat, and brown the chicken thighs on all sides. Remove and set aside.
- In the same pot, add chopped onion and sauté until translucent, about 5 minutes. Add garlic and cook for another minute until fragrant.
- Stir in red bell pepper and cook for 3 more minutes until softened.
- Add diced tomatoes, tomato paste, carrots, and potatoes to the pot. Mix in paprika and bay leaves.
- Return the browned chicken to the pot and pour chicken broth over the mixture. Bring to a boil, then reduce heat to low.
- Cover and simmer for 45 minutes, or until chicken is cooked through and vegetables are tender.
- Stir in fresh parsley and season with salt and pepper to taste before serving.
