Ingredients
- white fish fillets – 4 fillets / ~800 g
- carrots – 3 medium / ~300 g, grated
- celery stalk – 2 sticks / ~200 g, diced
- onion – 1 large / ~150 g, finely chopped
- tomato puree – 1/2 cup / 120 ml
- vegetable oil – 3 tbsp / 45 ml
- flour – 1/2 cup / 60 g
- salt and pepper – to taste
- sugar – 1 tsp / 4 g
- bay leaf – 1
- lemon juice – 2 tbsp / 30 ml
Instructions
- Season the fish fillets with salt and pepper, then dredge them in flour.
- In a large pan, heat 2 tablespoons of vegetable oil over medium heat and fry the fish fillets until golden brown on both sides. Remove from the pan and set aside.
- In the same pan, add another tablespoon of vegetable oil and sauté the onions until translucent.
- Add the grated carrots and diced celery, cooking until softened, roughly 10 minutes.
- Stir in the tomato puree, sugar, bay leaf, and lemon juice. Season with salt and pepper.
- Simmer the sauce for about 5 minutes, then remove the bay leaf.
- Arrange the fried fish fillets in a baking dish, cover with the vegetable sauce, and let it cool before refrigerating for at least 2 hours to allow the flavors to meld.
- Serve chilled or gently warmed.
