Ingredients
- Basmati rice – 2 cups / 400 g
- Chicken pieces (bone-in) – 1 kg / 2.2 lbs
- Onion, finely chopped – 1 large / 200 g
- Carrot, grated – 1 large / 150 g
- Tomatoes, diced – 2 medium / 250 g
- Garlic cloves, minced – 4 cloves / 20 g
- Ground cumin – 1 tsp
- Ground coriander – 1 tsp
- Ground cinnamon – 1/2 tsp
- Vegetable oil – 3 tbsp
- Chicken broth – 4 cups / 960 ml
- Salt – to taste
- Black pepper – to taste
- Bay leaf – 1
Instructions
- Rinse the basmati rice under cold water until the water runs clear.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.
- Add the garlic and continue to sauté for another minute until fragrant.
- Introduce the chicken pieces, cooking until they are browned on all sides.
- Stir in the cumin, coriander, cinnamon, salt, and black pepper, ensuring the chicken is well-coated with spices.
- Add the grated carrot and diced tomatoes, cooking for 5 minutes until soft.
- Pour in the chicken broth and add the bay leaf. Bring to a gentle boil.
- Add the rinsed rice, stir well, and lower the heat. Cover the pot and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork, adjust seasoning, and serve hot.
