Ingredients

  • Beef Chuck – 1.5 lbs / 680 g
  • Olive Oil – 2 tbsp / 30 ml
  • Onion – 1 large, chopped
  • Garlic Cloves – 4, minced
  • Carrots – 2 large, sliced
  • Celery Stalks – 2, diced
  • Tomato Paste – 2 tbsp / 30 g
  • Red Wine – 1 cup / 240 ml
  • Beef Broth – 4 cups / 960 ml
  • Thyme Sprigs – 3
  • Bay Leaves – 2
  • Salt – to taste
  • Black Pepper – to taste
  • Parsley – for garnish, chopped

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown the beef in batches; remove and set aside.
  3. In the same pot, sauté onions, garlic, carrots, and celery until softened.
  4. Stir in tomato paste and cook for 2 minutes.
  5. Pour in the red wine, scraping the bottom of the pot to deglaze.
  6. Return beef to the pot; add beef broth, thyme, bay leaves, salt, and pepper.
  7. Bring to a simmer, cover, and cook on low heat for 2.5 hours, or until the beef is tender.
  8. Garnish with chopped parsley before serving.
