Ružice, meaning ‘little roses’, is a traditional Bosnian pastry known for its delicate layers and sweet, nutty filling. Originating from the rich culinary traditions of Bosnia and Herzegovina, Ružice showcases the region’s love for aromatic nuts and syrup-infused desserts.

Ingredients

  • phyllo pastry – 500 g / 18 oz
  • butter, melted – 150 g / 2/3 cup
  • walnuts, finely chopped – 200 g / 2 cups
  • sugar – 100 g / 1/2 cup
  • water – 200 ml / 7 fl oz
  • honey – 2 tablespoons
  • lemon juice – 1 tablespoon

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Combine the chopped walnuts and sugar in a bowl.
  3. Unroll the phyllo pastry and cover with a damp cloth to prevent drying.
  4. Brush each sheet of phyllo with melted butter, sprinkling the walnut mixture over the top.
  5. Roll the sheet from both ends towards the center to form ‘rose’ shapes.
  6. Place the rolled pastries in a buttered baking dish.
  7. Bake for 25-30 minutes or until golden brown.
  8. While baking, prepare the syrup by heating water, honey, and lemon juice until the sugar dissolves.
  9. Pour the syrup over the warm pastries and let them soak for at least an hour before serving.
