Ingredients

  • all-purpose flour – 2 cups / 240 g
  • fine semolina – 1 cup / 150 g
  • warm water – 1 cup / 240 ml

  • salt – 1 tsp / 5 g

Instructions

  1. In a mixing bowl, combine the all-purpose flour, semolina, and salt thoroughly.
  2. Make a well in the center and gradually pour in warm water while stirring to form a dough.
  3. Knead the dough on a floured surface for about 10 minutes until smooth.
  4. Divide the dough into equal portions, cover them with a cloth, and let rest for 30 minutes.
  5. Heat a non-stick pan over medium heat and lightly oil it using olive oil.
  6. Roll each dough piece into a thin circle and place it on the pan.
  7. Cook for approximately 2 minutes on each side until golden and puffed.
  8. Remove from heat, brush with a bit more olive oil, and serve warm.
