Roscón de reyes – Classic

Roscón de Reyes is a beloved Spanish sweet bread traditionally enjoyed on Epiphany, January 6th, marking the arrival of the Three Wise Men. Its origins trace back to the Roman era, but it has been embraced by Spanish culture over centuries. This ring-shaped cake is adorned with candied fruits symbolizing the crown’s jewels and often hides a small figurine and a dry bean, bringing good fortune or requiring the bean-finder to buy the next year’s roscón.

Ingredients

  • all-purpose flour – 4 cups / 500 g
  • granulated sugar – 1/2 cup / 100 g
  • milk – 1 cup / 240 ml
  • unsalted butter – 1/2 cup / 113 g
  • eggs – 3 large
  • active dry yeast – 2 and 1/4 teaspoons / 7 g
  • grated lemon zest – 1 tablespoon
  • grated orange zest – 1 tablespoon
  • salt – 1 teaspoon
  • candied fruit – 1 cup / 150 g
  • sliced almonds – 1/4 cup / 30 g
  • powdered sugar – for dusting

Instructions

  1. Warm the milk until lukewarm and dissolve the yeast in it. Let it sit for 10 minutes until frothy.
  2. In a large bowl, mix flour, sugar, and salt.
  3. Add the frothy yeast, eggs, lemon zest, orange zest, and softened butter to the dry ingredients. Mix to form a dough.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a cloth, and let rise in a warm place for about 2 hours or until doubled in size.
  6. Punch down the dough, form a large ring, and place it on a baking sheet lined with parchment paper.
  7. Brush with beaten egg and decorate with candied fruits and almonds. Let it rise for another 30 minutes.
  8. Preheat the oven to 350°F (175°C). Bake the roscón for 25-30 minutes until golden brown.
  9. Let cool and dust with powdered sugar before serving.
