Romesco is a vibrant and flavorful sauce hailing from the Catalonia region of Spain. Traditionally crafted by fishermen, this sauce was designed to accompany the fresh catch of the day from the Mediterranean Sea. With its deep red hue and rich, smoky flavor, Romesco is a harmonious blend of roasted peppers, tomatoes, nuts, garlic, and vinegar, offering a perfect balance of tanginess, sweetness, and subtle heat. Ingredients
- Red bell peppers – 2 large / 320 g
- Tomatoes – 2 medium / 240 g
- Garlic cloves – 3 cloves / 15 g
- Blanched almonds – 1/2 cup / 60 g
- Hazelnuts – 1/4 cup / 30 g
- Extra virgin olive oil – 1/2 cup / 120 ml
- Sherry vinegar – 2 tablespoons / 30 ml
- Smoked paprika – 1 teaspoon / 2 g
- Salt – 1 teaspoon / 5 g
- Black pepper – 1/2 teaspoon / 1 g
Instructions
- Roast the bell peppers over an open flame or in the oven until the skin is charred. Place in a bowl, cover with plastic wrap, and let them steam for 15 minutes.
- While the peppers steam, roast the tomatoes in the oven at 375°F (190°C) for 20 minutes until soft.
- Peel the skins from both the peppers and tomatoes once cool enough to handle.
- In a dry skillet, toast the almonds and hazelnuts over medium heat until golden and fragrant, about 5 minutes. Allow to cool.
- In a food processor, combine the peeled peppers, tomatoes, toasted nuts, garlic, olive oil, vinegar, paprika, salt, and black pepper. Blend until smooth.
- Taste and adjust seasoning as needed.
