Rogan Josh is an aromatic and richly spiced curry with roots deeply embedded in Indian and Persian cuisines. Ingredients

  • lamb shoulder, diced – 1 kg / 2.2 lbs
  • yogurt – 1 cup / 240 g
  • onions, sliced – 2 large / 300 g
  • garlic cloves, minced – 4 cloves
  • ginger, grated – 2 tbsp / 30 g
  • ghee or clarified butter – 1/4 cup / 60 ml
  • ground cumin – 1 tbsp / 15 g
  • ground coriander – 1 tbsp / 15 g
  • ground turmeric – 1 tsp / 5 g
  • Kashmiri red chili powder – 2 tbsp / 30 g
  • garam masala – 1 tsp / 5 g
  • salt – to taste
  • water or beef stock – 2 cups / 480 ml
  • fresh coriander leaves, chopped – for garnish

Instructions

  1. In a large bowl, marinate lamb with yogurt, garlic, ginger, ground cumin, coriander, and turmeric. Let it sit for at least 30 minutes.
  2. Heat ghee in a large heavy-bottomed pot over medium heat. Fry the onions until golden brown.
  3. Add marinated lamb to the pot. Cook for 15 minutes, stirring occasionally until browned.
  4. Add Kashmiri red chili powder and garam masala. Stir well and pour in the water or beef stock.
  5. Reduce heat and cover. Simmer for about 1.5 hours or until the lamb is tender and the sauce has thickened.
  6. Adjust salt to taste and garnish with fresh coriander leaves before serving.
