Instructions

  1. In a saucepan, bring the vegetable broth to a simmer over low heat.
  2. In a separate large skillet, heat olive oil over medium heat. Add the onion and sauté until translucent.
  3. Add the Arborio rice to the skillet, stirring constantly until it is coated and slightly translucent.
  4. Pour in the white wine and stir until it is fully absorbed by the rice.
  5. Begin adding the simmering broth one ladle at a time, stirring frequently. Wait until nearly all the broth is absorbed before adding the next ladle.
  6. After about 15 minutes, stir in the asparagus tips, continuing to add broth and stirring until the rice is al dente and creamy.
  7. Remove from heat and stir in the butter and half of the Parmesan cheese, mixing until fully incorporated and creamy.
  8. Season with salt and black pepper to taste.
  9. Serve immediately, garnished with the remaining Parmesan cheese.
