Ingredients
- Arborio rice – 1.5 cups / 300 g
- Fresh nettle leaves – 4 cups / 240 g
- Vegetable broth – 6 cups / 1.5 L
- White onion, finely chopped – 1 large
- Garlic cloves, minced – 3
- Extra virgin olive oil – 3 tbsp / 45 ml
- Grated Parmesan cheese – 0.5 cup / 50 g
- Unsalted butter – 2 tbsp / 28 g
- Dry white wine – 0.5 cup / 120 ml
- Salt and pepper – to taste
Instructions
- Blanch nettle leaves in boiling water for 1 minute, then immediately drain and plunge into ice water. Pat dry and chop coarsely.
- Heat the vegetable broth in a pot; keep it warm.
- In a large pan, heat olive oil over medium heat. Add the onion and garlic, sauté until translucent.
- Stir in the rice, toasting it for about 2 minutes until lightly golden.
- Pour in the white wine, stirring until absorbed by the rice.
- Add one ladle of warm broth and stir until almost absorbed. Repeat this process, adding broth gradually and stirring constantly, until the rice is creamy and al dente, about 18 minutes.
- Stir in the blanched nettles, Parmesan cheese, and butter. Season with salt and pepper according to taste.
- Remove the pan from heat and let the risotto sit for a minute before serving with extra Parmesan.
