Ingredients

- Olive oil – 2 tbsp / 30 ml
- Onion, finely chopped – 1 medium / 150 g
- Chicken broth – 4 cups / 960 ml
- White wine – 1/2 cup / 120 ml
- Parmigiano-Reggiano, grated – 1 cup / 100 g
- Salt – to taste
- Black pepper – to taste
Instructions
- In a large saucepan, heat the olive oil and butter over medium heat. Add the chopped onion and saute until translucent.
- Add the pork sausage to the pan, breaking it up with a spoon, and cook until browned.
- Stir in the Arborio rice, allowing it to toast lightly for 2-3 minutes.
- Pour in the white wine and cook, stirring, until the liquid is absorbed.
- Gradually add the warm chicken broth, one ladleful at a time, stirring frequently and allowing the liquid to absorb before adding more.
- Continue this process until the rice is creamy and cooked to al dente, approximately 18-20 minutes.
- Stir in the grated Parmigiano-Reggiano and season with salt and black pepper to taste.
- Serve hot, topped with additional cheese if desired.
