Risotto al vino rosso – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Risotto al Vino Rosso is a sophisticated Italian rice dish that hails from the hearty northern regions of Italy, particularly Piedmont and Lombardy. It’s a testament to Italy’s rich culinary tradition that skillfully combines the luxurious creaminess of risotto rice with the deep, robust flavors of red wine. This dish is often enjoyed as a first course or a stunning entrée, offering a symphony of flavors that highlight the versatility of wine beyond the glass. The key to its elegance is in the slow, patient stirring, which coaxes out the starches of the Arborio rice, resulting in a creamy and velvety texture that perfectly balances the wine’s tannic notes.

Ingredients

  • Arborio rice – 1.5 cups / 300 g
  • Red wine – 1 cup / 240 ml
  • Chicken or vegetable stock – 4 cups / 960 ml
  • Butter – 4 tbsp / 56 g
  • Onion – 1 medium, finely chopped
  • Garlic – 2 cloves, minced
  • Parmesan cheese – 1 cup / 90 g, grated
  • Olive oil – 2 tbsp / 30 ml
  • Salt – to taste
  • Black pepper – to taste

Instructions

  1. Heat the olive oil and 2 tablespoons of butter in a large pan over medium heat.
  2. Add the chopped onion and garlic, cooking until soft and translucent.
  3. Stir in the Arborio rice, toasting it for about 2 minutes until it’s lightly golden.
  4. Pour in the red wine and cook, stirring constantly, until it’s absorbed by the rice.
  5. Gradually add the stock, one ladle at a time, stirring continuously and allowing each ladleful to be absorbed before adding the next.
  6. Continue this process until the rice is creamy and al dente, which should take about 18-20 minutes.
  7. Stir in the remaining butter and grated Parmesan, seasoning with salt and pepper to taste.
  8. Serve immediately with an extra sprinkle of Parmesan if desired.

Substitutions
