Ingredients

  • Butter – 4 tbsp / 56 g
  • Olive oil – 2 tbsp / 30 ml
  • Onion, finely chopped – 1 small / 100 g
  • White wine – 1/2 cup / 120 ml
  • Garlic cloves, minced – 3 cloves / 9 g
  • Salt – to taste
  • Black pepper, freshly ground – to taste

Instructions

  1. Heat the broth in a saucepan and keep it warm over low heat.
  2. In a large pan, heat olive oil and 2 tablespoons of butter over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent.
  3. Stir in the Arborio rice, allowing it to toast lightly for about 2 minutes.
  4. Pour in the white wine, stirring continuously until it is fully absorbed by the rice.
  5. Begin adding the warm broth one ladle at a time, stirring frequently. Add more broth as each portion is absorbed. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
  6. Stir in the parsley and the remaining butter. Remove from heat and mix in the grated Parmesan cheese. Adjust seasoning with salt and pepper.
  7. Garnish with additional parsley and serve immediately.
