- Parmesan cheese – 1 cup / 100 g, grated
- Fresh thyme – 1 tablespoon / 15 g
- Salt – to taste
- Black pepper – to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-proof skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the Arborio rice to the skillet, stirring to coat the grains with oil, onion, and garlic.
- Pour in the stock and bring the mixture to a simmer. Stir in fresh thyme, salt, and pepper.
- Transfer the skillet to the preheated oven and bake uncovered for 20 minutes.
- Sprinkle the grated Parmesan cheese over the rice and return to the oven for another 10 minutes until the cheese is melted and the rice is golden brown.
- Allow to cool slightly before serving.
